Inflammation and Free Radicals are NORMAL

Without them we would, well, die.  Oddly enough, they are also the number one and two causes of ALL diseases from Asthma to Cancer to Alzheimer’s.

Inflammation is an essential reaction to an invasion (like a bacteria or a virus).  It’s a dramatic response that pretty much gets the whole immune system ramped up and on alert.   This is really good, without it we would die from infections.

Free Radicals happen all the time.  They are reactive charged molecules (O2 is oxygen, but O- is a reactive oxygen species).  They have to be made or we would die too.  They also have to be neutralized.

  • Mitochondria make free radicals when they burn up glucose for energy.
  • White blood cells us free radicals to kill bacteria and viruses.
  • The liver makes free radicals in the process of detoxification.

So here we are, a nation of inflamed and over oxidized people, so obviously something has gone wrong; really, really wrong. Continue reading »

ORAC stands for Oxygen Radical Absorbance Capacity

There are several methods for measuring the antioxidant capacity of food ORAC is one way to do so, and one of the more trusted methods.  Here’s an abbreviated run-down on how it works.

The ORAC method of measurement was developed by the National Institute on aging and the National Institute on Health (NIH).  The USDA has developed a list of foods based on their ORAC value, the higher the value, the greater the Antioxidant capacity.  It’s hard to get an exact number for a certain food, like blueberries.  The antioxidant capacity is greatly influenced by the quality of the soil, growing conditions (the use of pesticides) and I suspect, with many fruits and veggies, if they have been genetically modified.
